70% DARK CHOCOLATE | PERU CHUNCHO
Classified as its own genetic variety, Chunco cacao beans are native to the foothills of Andes, found at higher elevations in the Sacred Valley of the Incas. Genetically isolated, and characterized by its unique floral aroma, Chunco cacao has been domesticated by indigenous groups, and processed through the Alto Urubamba cooperative who work closely with their community members to ensure sales transparency while offering agronomical and financial support. To maintain the delicate notes, Chuncho cacao beans are not fully fermented, resulting in a complex and rich flavour profile.
